Fennel-Orange-Strawberry Salad (4 servings)
Salad Ingredients: One Fennel Bulb
6 to 8 Stawberries
Slice very thinly the fennel bulb. (mandoline works great for this)
Peel Orange and Cut orange sections in thirds (remove any seeds)
Wash Strawberries and set on paper towel to dry.
One tablespoon sunflower oil (or olive oil)
Half teaspoon honey (or sugar)
½ teaspoon rice vinegar (or any white vinegar like white balsamic, apple, white wine vinegar)
Pinch or two of salt
Pinch or two of black or white pepper
Combine sliced fennel, and orange. Prepare dressing and pour over salad sans strawberries, gently stir. Cut strawberries and gently mix in. Eat right away. (If not eating right away, add strawberries just before serving so they don’t get soggy)
This could also work as a topping over plain lettuce.
